Homemade Purple Marshmallows

Homemade Purple Marshmallows: make your own marshmallows at home with your stand mixer and a candy thermometer. So delicious.

My cousins favourite colour is purple, so for her bridal shower I thought it would be fun to make a whole buffet of purple food, including homemade purple marshmallows.  

These are pretty easy to make and perfect for a party.  You really could make them in any colour that suited your theme.  Our purple ones turned out great, and were a real hit at the party.

We started out with all the ingredients assembled.

It took awhile to get the sugar and corn syrup up to the right temperature.

We added it to the gelatin in the mixer and it was magic time!

After beating for a loooong time, it was time to add the food colouring.

We finally got it purple enough, after a whole little bottle of red and blue!

Then they had to sit overnight.  This morning I cut them up and tried one.  They are so creamy, much better than store bought.  Even though my daughter said “purple food is weird”, I think they turned out great and I’m really looking forward to the party tomorrow!

Homemade Purple Marshmallows

Ingredients

  • 3 packages unflavored gelatin
  • 1 cup ice cold water, divided
  • 12 ounces white sugar
  • 1 cup light corn syrup
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 1/4 cup powdered sugar
  • 1/4 cup cornstarch
  • Nonstick spray
  • red and blue food colouring

Instructions

    1. Put the gelatin in your stand mixer with the whisk attachment and add 1/2 cup of the water. Have this on stand by for later.
    2. In a small pan combine the remaining 1/2 cup water, white sugar, corn syrup and salt. Cook over a medium heat until the mixture reaches 240 degrees F, about 7 to 8 minutes. Once the mixture reaches this temperature remove it from the heat immediately.
    3. Next turn the mixer on low speed and, while running, slowly pour the sugar syrup down the side of the bowl into the gelatin mixture. Once it's all combined, continue mixing on high speed until it becomes very thick and is lukewarm, about 12 to 15 minutes. Add the vanilla and food colouring at the end, adding enough to food colouring to acheive the colour you like.
    4. Mix the powdered sugar and cornstarch in a small bowl. Lightly spray a 13 by 9-inch metal baking pan with nonstick cooking spray and add the sugar and cornstarch mixture. Carefully the pan around to completely coat it.
    5. Next pour the marshmarllows into the prepared pan, using a lightly oiled spatula to spread it evenly. Dust the top as well with enough of the remaining sugar and cornstarch mixture to lightly cover. Reserve the rest for later. Let the marshmallows sit uncovered overnight.
    6. Turn the marshmallows out onto a cutting board and cut into 1-inch squares using a pizza wheel dusted with the icing sugar mixture. After cutting lightly dust each marshmallow with the remaining mixture. Store in an airtight container for up to 3 weeks.

  2. I have been wanting to try homemade marshmallows for a while. Thanks for the great tutorial. As I love all things purple ( my blog is purple chocolat home) I think purple food is rad!
