My sweet God-daughter Tara is turning 7 tomorrow, and having a “Frozen” party on the weekend to celebrate. I thought it might be fun to make something Frozen inspired for the party, and came up with these sweet Frozen Rice Krispie Treats. They’ve got everything going for them, chocolate, rice krispie squares, and they make you start singing “do you want to build a snowman…”.
I started out with regular old rice krispie squares, but made them a little thinner than usual, so they’d be easier to cut out with a cookie cutter. I sprayed a cookie sheet with baking spray, and spread the mixture out so it was about 3/4 of an inch thick -which didn’t fill the entire pan. Once they were set I used a snowflake cookie cutter and cut them up. And, forced myself not to eat every last piece of scrap from in-between.
Next comes dipping them in melted chocolate. I have a tip for you: put the snowflake shaped rice krispies, with a lollipop stick inserted into them in your freezer for a while before you dip them. If not, the hot chocolate makes the marshmallow start to melt…and then you’ll finally see what frozen things do in summer…. So learn from my mishaps and pop them in the freezer first, or if it’s -19 degrees outside, put them out on your deck for a little while like I did yesterday.
Melt your chocolate in a double boiler, and dip them in, using a spoon to help you get all the tricky spots. Once they’re dipped, let them set on some parchment paper. You could just dip the top in, but I wanted the chocolate to coat the whole square, and keep it nice and fresh, since I made these a few days before the party.
Next, I melted some white chocolate in a mini-ziplock bag and piped on the snowflake detail. Some of them got sprinkles, edible glitter, or coarse sugar too for a little sparkle.
I’m feeling in a bit of a “Christmas is over, and now it’s just the beginning of a long cold winter” -blah. Can anyone relate, as we all try to return to routine this week? But I have over the years learned that spending time with friends, and family, and creating celebrations helps to make it all better. I can’t wait to enjoy the Frozen party this weekend, and since it’s cold and snowy here anyway, the old adage “if you can’t beat ‘em, join ‘em” comes to mind. Do you want to build a snowman?
