Apple Dumplings

With all the fresh Ontario apples everywhere at this time of year, I always love to make apple dumplings.  This is an old family recipe, that my mom and my mom’s mom used to use.  They always made the pie pastry from scratch, but my version makes it really quick and easy.  No need to wait until Sunday dinner, with the convenience of frozen pastry it can really be an anytime treat.  It’s always well received, and might make a really delicious addition to Thanksgiving dinner this weekend, it’s even easy enough to replace a store bought apple pie.

Apple Dumplings

(makes 6 Dumplings, but can easily be doubled as I did here for 12)

Ingredients:

  • One frozen pie shell, defrosted
  • 2 Macintosh Apples, peeled and quartered to make six pieces (2 leftover for munching)
  • 1 cup white sugar
  • 3 tbsp flour
  • 2 tbsp butter
  • 1/8 tsp salt
  • 3 cups boiling water
  • sprinkling of cinnamon and nutmeg

Method:

1.  Peel the apples and cut into quarters, removing the core.

2.  Wrap 6 pieces of apple in pie dough, trying not to overlap the dough, but making sure the apple is completely  covered.

3.  Mix sugar, flour, and salt in a casserole baking dish.  Add butter.  Slowly add boiling water, and whisk out any lumps of flour.

4.  Float dumplings in the sauce, and sprinkle with cinnamon and freshly grated nutmeg.

5.  Bake at 350 for about 45 min.  Let cool slightly.  Serve warm with vanilla ice cream or whip cream.
