No. 6 -Dips and Veggies

Every party needs a Veggies and Dip platter, but sometimes they seem a little boring. We jazzed ours up a little by serving them in individual containers. I found these cute containers at Party Packagers. I made a super simple dip of sour cream and onion soup mix, and let it sit in the fridge a few hours. At party time we simply put a small amount of dip in the individual containers, and added the veggies, which had all be cut in long strips.

These also look great done in a shot glass, even the disposable plastic ones look great.

I also did a great hot Spinach and Artichoke Dip. This one warms up in your crock pot for a few hours before serving, so it’s always great for a party, and even transfers really easily for a pot luck.

Cheesy Spinach and Artichoke Dip

  • 14 oz. can of artichoke hearts, drained and chopped
  • 10 oz. pkg of frozen chopped spinach, thawed, and squeezed dry
  • 8 oz. container of light cream cheese
  • 8 oz. container of light sour cream
  • 3/4 cup of Parmesan cheese
  • 3/4 cup milk
  • 1/2 cup crumbled light feta cheese
  • 1/2 cup diced onion
  • 1/2 cup mayonnaise
  • 1 tbsp. red wine vinegar
  • 1/4 tsp. ground pepper
  • 2 garlic cloves, minced

Place all the ingredients in a slow cooker, and stir well to combine. Cook on low setting 2 hrs. Serve warm with pita or tortilla chips.

Everything is cuter served in individual serving pieces, so here’s a cute idea. Think of unconventional serving pieces, like this beautiful depression glass tea cup. Now that’s my cup of tea. 😉

Here’s another great idea for individual servings. I made these Caprese salad Skewers with a cherry tomato, a fresh basil leaf, and half a bocconcini mozarella ball.

I served them in plastic shot glasses, with a simple balsamic and olive oil vinaigrette in the bottom and freshly ground pepper.

You know how cooking shows are always telling you it doesn’t need to be super complicated, that simple, fresh food is the key to making something really delicious? They’re right.

Every party needs some dips and veggies, here’s a few ideas to make them a little more special, without too much extra work. 😉
