I found some sweet floral paper cups over the weekend and thought they were the perfect excuse for a little Mother’s Day picnic. We filled them with some tea and made a batch of Cinnamon Raisin Biscuits -a family favourite and headed to the park.
Cinnamon Raisin Biscuits (3 WWP+ per Biscuit)
- 2 cups all-purpose flour
- 3 tbsp sugar
- 1 tbsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/4 cup of cold butter
- 2/3 cup raisins
- 1 cup of skim milk
- cooking spray
- 3/4 cup icing sugar
- 1 tbsp + 1 tsp skim milk
- Preheat oven to 400 degrees.
- Combine first 5 dry ingredients in a bowl. Cut in cold butter with a pastry blender, until it resembles coarse meal. Sir in raisins. Add 1 cup of skim milk, and stir to form a dough.
- Turn dough onto a lightly floured surface and knead a few times. Divide dough into 4 equal balls. Flatten each ball into a 1/2 inch thick circle, and cut into 4 triangles. Repeat with 3 remaining balls of dough to make 16 small biscuits. Spray baking sheet with cooking spray and bake at 400 for 10-12 min. until lightly browned. Let cool.
- Combine icing sugar with 1 tbsp + 1 tsp of skim milk stirring well to form a glaze. Drizzle glaze over biscuits. Enjoy!
We packed up our treats in a little basket for our picnic, and grabbed a throw and few cushions.
I used a berry basket and some parchment paper for our Cinnamon Raisin Biscuits, and Maddie made these cute little Mother’s Day flags to help us celebrate.
