I wanted to make a little treat for my Valentine. He’s originally from Guyana and a big fan of all things coconut. With this snowy, snowy weather I was inspired to make him some coconut hot chocolate.
- 3/4 cup coconut milk
- 1/2 cup milk
- 1 tbsp sugar
- 1 tbsp cocoa powder
- 1 oz milk chocolate
- pinch of salt
- 1 oz Baileys -optional
- In a saucepan, combine milk, coconut milk, sugar, cocoa powder and salt, and heat over a medium heat while stirring.
- Break up the chocolate into small pieces, and add to the warm mixture, stirring until melted.
- Take off the heat, and stir in 1 oz. Baileys, if you wish and serve in a mug garnish with whipped cream and marshmallows.
Adding the shot of Baileys as well is optional, but it really was yummy! I topped off the coconut hot chocolate with some whipped cream, and a home made Bailey’s marshmallow -with a little heart cut out for my lovey. You can find the recipe for the Bailey’s marshmallows here, or just use a regular one, and cut out a heart from it with a mini cookie cutter like I did.
With home made coconut hot chocolate for your sweetie, life really is a party!
