Coconut Hot Chocolate

I wanted to make a little treat for my Valentine. He’s originally from Guyana and a big fan of all things coconut. With this snowy, snowy weather I was inspired to make him some coconut hot chocolate.

Coconut Milk Hot Chocolate: combine the sweetness and creaminess of coconut milk with the pleasure of chocolate, and you have the perfect treat for a cold day.  Easy recipe.

Coconut Hot Chocolate

Ingredients

  • 3/4 cup coconut milk
  • 1/2 cup milk
  • 1 tbsp sugar
  • 1 tbsp cocoa powder
  • 1 oz milk chocolate
  • pinch of salt
  • 1 oz Baileys -optional

Instructions

  1. In a saucepan, combine milk, coconut milk, sugar, cocoa powder and salt, and heat over a medium heat while stirring.
  2. Break up the chocolate into small pieces, and add to the warm mixture, stirring until melted.
  3. Take off the heat, and stir in 1 oz. Baileys, if you wish and serve in a mug garnish with whipped cream and marshmallows.

Adding the shot of Baileys as well is optional, but it really was yummy!  I topped off the coconut hot chocolate with some whipped cream, and a home made Bailey’s marshmallow -with a little heart cut out for my lovey.  You can find the recipe for the Bailey’s marshmallows here, or just use a regular one, and cut out a heart from it with a mini cookie cutter like I did.
