These are a fair food classic, a special treat when ever we have the pleasure of partaking. Just the thought of funnel cakes brings to mind sweet memories of Disney World, or Canada’s Wonderland. But since those days are few and far between, we started making them at home. They are really pretty easy to make, if you can just get your head around the deep fryer. I have an old one, but they really are worth having in your stash, and relatively inexpensive too.
- 2 eggs
- 1 1/2 cups milk
- 1 tsp vanilla
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp salt
- oil for frying
- icing sugar
- 1. Sift together dry ingredients.
- 2. In another mixing bowl, stir together eggs, milk, vanilla. Add in the dry ingredients, and stir to combine.
- 3. Heat oil in a deep fryer, or deep pot to 350 degrees.
- 4. Put batter in a ziplock, cut a small hole in the corner and squeeze into the hot oil in a random pattern. Fry until golden brown, and flip over to the other side. Drain on paper towel, and sprinkle with icing sugar. Serve with ice cream.
I love doing something like this for a party. We just plug-in our little fryer outside, beside the bbq and cook these up for our guests while they linger around the table with a glass of wine, and some music playing in the background.
It makes for the perfect casual summer entertaining treat, oh and did i mention your guests will be totally impressed? They will.
