Cut the bocconcini ball into slices, and layer the meat, cheese, and roasted red pepper, on thickly sliced French bread Add some pesto sauce. Once the sandwich is made, brush the two outer sides with olive oil, just like a regular panini.
To make your campfire panini press, wrap a large rock that is flat on one side with aluminum foil. Cover your campfire grill with aluminum foil.
Place your sandwich on the grill and put the rock on top to flatten it. Cook until the bottom is toasted and then flip over to the other side and cook until it's toasted and the cheese is melted. Then enjoy!
