Chocolate Chip Cookies
Tender chocolate chip cookies made with shortening.

Ingredients
- 2 cups vegetable shortening
- 1 ½ cup white sugar
- 1 ½ cup light brown sugar
- 3 eggs
- 3 teaspoon vanilla extract
- 4 cups all purpose flour
- 1 ½ teaspoon baking soda
- 1 ½ teaspoon salt
- 2 ½ cups semi-sweet chocolate chips or 1 ¼ cups chocolate chips and 1 ½ cups toffee bits
Instructions
- Cream shortening and sugars together in the large bowl of your stand mixer.
- Add in eggs and vanilla and mix well.
- Add flour, baking soda, and salt to the wet ingredients and mix until fully combined, but don't over mix the cookie dough.
- Add the chocolate chips and toffee bits, and mix until even distributed.
- Drop by tablespoonful or using a cookie scoop onto an ungreased cookie sheet, and bake at 350 degrees for about 10 min, until golden brown. Cool baked cookies on a wire rack.
