Cream butter and sugar in the bowl of a stand mixer fitted with the paddle attachment.
Mix in rice flour and all purpose flour until combined, being sure to scrape down the sides of the bowl occasionally.
Add in the chocolate chips, and fully combine.
Drop by teaspoonful on cookie sheets making 1-inch balls. Bake at 300 degrees F, for 20-30 min. until just turning golden brown around the edges. Cook the cookies on a wire rack, and store them in an airtight container.
Notes
Chocolate Chips: I sometimes make these with milk chocolate chips and sometimes semi sweet chocoalte chips. Either is delicous.
