Instructions
Make both packages of instant chocolate pudding according to the package directions using 4 cups of milk total. Whisk until smooth and let sit about 5 minutes to thicken. Place in the refrigerator while you whip the cream for thicker layers.
Combine the whipping cream, sugar, and vanilla in a large bowl. Beat on high speed until stiff peaks form. Stiffer cream holds up better as the trifle chills and won't deflate or weep.
473 mL Whipping Cream, 3 tablespoons sugar, 1 teaspoon vanilla
Slice or quarter the two-bite brownies and create an even layer across the bottom of a large trifle bowl, pressing to the edges. Spoon approximately half the chocolate pudding over the brownies and spread to the edges. Add approximately half the whipped cream as the next layer, spreading to the edges.
600 g Two-bite Brownies
Place ½ cup of Cadbury Mini Eggs in a zip-lock bag and use a rolling pin to break them into pieces, aiming for a mix of larger and smaller pieces with a few whole eggs left in. Distribute evenly over the whipped cream.
1 cup Cadbury Mini Eggs
Add another brownie layer, then spoon on the remaining chocolate pudding and the remaining whipped cream. Set the remaining ½ cup of Cadbury Mini Eggs aside for serving.
Cover with plastic wrap and refrigerate for at least 2 hours. Do not add the top Mini Egg layers yet. Once chilled and ready to serve, break up the reserved ½ cup of regular Mini Eggs in a zip-lock bag using a rolling pin, then scatter them over the top along with the ¼ cup of Cadbury Micro Mini Eggs. Adding them after chilling keeps the colors bright and vivid without any color bleed.
Notes
Micro Mini Eggs: Most widely available in Canada but also found at some US Walmart locations and online. If you cannot find them, leave out the top layer or use an extra ¼ cup of regular Mini Eggs instead.
Individual servings: Halve the recipe and divide among 4 individual glasses or mason jars using the same layering method.
Make ahead: Assemble up to 24 hours in advance. Keep covered in the refrigerator. Add the top Mini Egg layer just before serving.
Homemade brownies: Any fudgy brownie recipe cut into 1-inch chunks works beautifully. Let them cool completely before assembling.
Storage: Covered in the refrigerator for up to 2 days. Does not freeze.
