To make the funnel cake batter begin by sifting together dry ingredients into a large mixing bowl. Combine the flour, baking powder, and salt.
In another medium mixing bowl, stir together eggs, milk, 1 teaspoon of vanilla. Add the wet ingredients into the flour mixture, and stir to combine.
Heat oil in a deep fryer, or deep pot to 350 degrees on a deep-fry thermometer over a medium-high heat.
Put the funnel cake batter in a ziplock, and cut a small hole in the corner or use a squeeze bottle to pour batter into the hot oil in a random pattern with a circular swirling motion. It might take a little practise to make the perfect funnel cake. You can make large or mini funnel cake forms. Fry until golden brown, and flip over to the second side with a slotted spoon or metal tongs. Repeat until you've used all the batter. Drain fried funnel cake on paper towels or a wire rack for the excess oil to drain, and then add a generous sprinkling of powdered sugar. Optional: Serve the warm funnel cake with a popular topping like ice cream, fresh fruit, chocolate sauce, caramel sauce, or cinnamon sugar.
