Cream the sugar and margarine together in the bowl of a stand mixer, or in a large bowl and use an electric mixer.
Add in 1 teaspoon vanilla and eggs, and mix until well combined.
Melt the chocolate in the microwave, and then add the melted chocolate chips to the batter, stir to combine.
Add the flour and combine, without over mixing.
Spray a 8 x 8 square baking pan with non-stick baking spray or line with parchment paper, and then add in the brownie batter. Bake at 350 degrees, for a bake time of 25-30 min. taking care not to over bake. The pan of brownies should be still slightly gooey in the middle when done. Cool on a wire rack and store in an airtight container.
