Mix the flour, sugar, baking powder and salt in a large bowl.
In another bowl, mix the wet ingredients; the milk, melted butter, eggs, and vanilla.
Combine the dry and wet ingredients and mix, but don't over mix. A few lumps are fine.
Spoon batter onto a hot griddle coated with a little butter, or frying pan at medium-high heat to cook. Add a spoonful of jam into the middle, and then top with some remaining batter to cover.
Cook on one side until the small bubbles that appear at the edge of the batter pop, then flip over and cook on the other side until golden brown.
Sprinkle finished pancakes with powdered sugar and serve warm. Enjoy.
