To make the pie crust, in a large bowl mix together the flour and sugar. Mix oil and milk in a separate bowl, then add to the flour and sugar mixture. Fully combine and press into a pie plate for form the pie crust. Bake at 400 degrees for 10 min., and then place on a wire rack to cool.
For the cream cheese filling, combine the cream cheese, sugar and lemon juice in the bowl of a stand mixer fitted with the paddle attachment and mix until smooth. Spread the mixture over the cooled pie crust.
Place 3 cups of sliced fresh strawberries on top of the cream cheese filling.
To make the glaze for the strawberries, combine 1 cup of sliced strawberries, water, cornstarch, 1 cup of sugar and lemon juice in a small saucepan and bring to a boil. Simmer for 3 min while stirring, and then remove from the heat. Allow to cool slightly, and then pour the strawberry glaze over the strawberry filling. Let the pie set in the refrigerator for several hours before serving. Serve with whipped cream.
