Peel and slice your peaches into a large mixing bowl and sprinkle ½ cup of sugar over peach slices and divide them between 6 -4oz. mason jars. Filling each jar about half way. Or instead of mini mason jars use small ramekins to make individual serving size.
Cream room temperature butter and 1 cup of sugar together. Stir in the dry ingredients of flour, baking powder and salt. Add egg and vanilla. Mix well.
Spoon crumble topping over peach mixture in each mason jar. Bake for about 20 minutes or until golden brown. Serve with whipped cream or vanilla ice cream.
Notes
To make one large peach cobbler use a 2 quart baking dish, and bake for 35-45 minutes.
