This Three Ingredient Coconut Ice Cream is sooo yummy, and soooo easy. The perfect combination! It’s a no cook also. It’s really checking all my boxes.
This is a perfect recipe to make with kids this summer -even toddlers could do this one.
You will need to break out your ice cream maker -this is the one I have and love.
- 400 mL can coconut milk
- 1/3 cup sugar
- Add coconut milk to a large glass measuring cup, and then add milk to make the total mixture 2 cups.
- Stir in sugar and stir to dissolve.
- Pour into the frozen ice cream machine and churn until frozen, according to manufacture's instructions. Enjoy!
- Optional -for a grownup dessert, add 2 tbsp of rum before churning.
We toasted a little coconut to add as a topping, it’s nice for a little crunch.
My girls enjoyed this ice cream and how easy it was to make so much that we picked up another few cans of coconut milk the next time we shopped -we figured we should probably have some on hand all summer. 😉
