When I decided to work on an at-home version of this recipe I was surprised by how easy it was to make at home. It all comes together in a few minutes in the blender.
My teenagers who seem to love any coffee beverage just love these in the summertime. And you can actually make them at home, faster than you can go to Tim Hortons and pick one up. And making them at home will cost you at fraction of the price, especially if you are buying them for your teens! You will never need to go out for a Tim Hortons iced capp again.
They're also perfect for entertaining and sure to impress your guests when you whip one up. They'd be a great additon to an at-home coffee shop party too.

I Love Ice Caps
I love a good ice cap. Many, many years ago -I think when ice caps were relatively new I was a new teacher. I had a very small class of 9 students in a private school. Our last (and one of our favourite) units for English was poetry writing. Our culminating activity for the unit was our own poetry cafe. My students were very excited to spend the whole period sharing their work with one another and creating our own cafe environment.
When we talked about a cafe they excitedly told me we should get ice caps because it was so hot out, they were so good, and it would be perfect for our cafe vibe. I had never had one before. On the day of the cafe I slipped out at recess and bought us all ice caps. You would have thought I had given them the moon. They couldn't believe it, and were so happy that I'd surprised them with this treat. It set the tone for an amazing poetry cafe, and is still one of my very favourite memories of teaching.
I think every time I've had an ice cap since then, I've thought fondly of them, my first class. I definitely missed this old favourite summer treat so I'm pretty excited to have an easy to make and delicious keto version to enjoy this summer. And my kids are loving the regular version made at home too.
Ingredients

- Coffee
Use whatever coffee you love and brew it how you normally do. I like a premium blend coffee made in a French press for the best coffee flavour, you can use a coffee maker instead, or a even instant coffee for your own version. Next time you brew a fresh pot and have some leftover you can even pop it into the fridge and save it to make an iced capp later.
Tip: You must use cold coffee.
If you use hot coffee the ice will melt and the iced capp won't have the thick creamy texture you love, it will be a bit watery -but still delicous.
- Heavy Cream
The heavy cream in this recipe really gives the best creamy texture and flavor to your iced capp, and is the most like a real Tim Hortons iced capp.
- Sugar
Regular sugar works great in this recipe. If you like your iced capp a little sweeter -because the Tim Horton's version is pretty sweet, just increase the sugar.
- Vanilla
A little vanilla goes a long way in this recipe, and adds great flavor to the finished drink.
Substitutions
You can do some ingredient substitutions if you need to.
- Using Milk Instead of Cream
Replace the cream with cold milk if you're looking for a lower calorie version with less fat content and not concerned about carbs. Also if you have an allergy or dietary issues you can substitute almond milk or coconut milk or another non dairy milk alternative. It will taste a little different but will still be delicious.
- Chocolate Milk
You can also substitute the cream with chocolate milk for a chocolate version of your favorite iced coffee drink.
- Sugar Free Keto Version
Switch out the sugar for sweetener and make a keto friendly low-carb version that only has a few carbs in it (depending on what brand of heavy whipping cream you use). And if you are keto or low-carb, you probably already have all the ingredients on hand. Some people add collagen and MCT oil powder -which you can do to make a frozen bulletproof coffee. I liked it as is.
For this recipe I used Monk Fruit Erythritol as the sweetener. It can be used at a one to one ratio as a replacement for regular sugar. Use my measurement as a guide, but adjust depending on whatever sweetener you prefer to use, and according to your own taste. Even if you're not looking for a lower carb version, using sweetener also has fewer calories.

Equipment
You will need a blender to make this drink. It whips up extra fast in a high-speed blender or magic bullet, but I had no problems making it in my regular blender that I use for smoothies all the time.
Tip: If you find your finished iced capp is a little icy, with small chunks of ice in it, you probably need to blend it a little longer to get it smoothly.

How To Make It
1. Brew 2 cups of regular coffee and set it aside to cool, or put it in the fridge until it has cooled down.
2. In a blender, combine ice, cream, sugar or monk fruit erythritol, vanilla and coffee.


3. Blend until smooth and completely combined. Pour into two tall glasses and enjoy.

Frequently Asked Questions
If you add hot coffee to the drink it will melt the ice and make a watery drink so be sure that it is cold before adding it.
If your iced capp has an icy texture with small chunks of ice it you didn't blend it long enough. Try blending it longer for a smoother drink.
Yes. The texture of the drink will be less creamy and rich, but these are still delicious made with milk.

Equipment

Ingredients
- 2 cups brewed coffee
- 4 cups ice cubes
- ⅓ cup heavy whipping cream
- 4 tablespoon sugar or monk fruit erythritol or favourite sweetener for the sugar free version
- ½ teaspoon vanilla extract
Instructions
