Easy Homemade Eggnog Frosting Recipe

I enjoy a little eggnog.  And I was thinking that eggnog cupcakes would pretty much be Christmas perfection.  If you love eggnog flavor than this eggnog frosting is the perfect addition to cupcakes, cookies, or cake.

I was inspired by fancy eggnog lattes and starting thinking of other favourites that could be improved upon with the addition of some eggnog.  If you’re working on some holiday baking this weekend, these would be a nice addition, especially if you’re an eggnog fan.  I made up a batch of my favourite vanilla cupcakes, and then added a delicious and easy eggnog icing.  This eggnog icing is great for adding a festive taste to things your baking for the holiday season.  Try this homemade frosting with your favorite cupcake recipes as the perfect topping, sure to be an absolute favorite.  

Eggnog

Historically eggnog used to be known as milk punch.  Eggnog recipes traditionally are made from whole milk, cream, eggs, and sugar and served around the holidays and new years.  It's ingredients are very similar to ice cream, or a very runny custard.  Most homemade real eggnog has traditionally contained raw eggs.  But a carton of eggnog from the grocery store contains only pasteurized eggs in the eggnog mixture, so it is safe to consume.  Eggnog also is often served with some alcohol added.  If you love rum in your eggnog, you can substitute the vanilla flavoring in our eggnog frosting recipe for a teaspoon rum extract.  It's traditionally served during Christmas season.  A glass of eggnog is often offered at a holiday party, or around the Christmas tree.  And sharing some eggnog is a favorite way entertain friends.

Nutmeg

Eggnog traditionally contains nutmeg, and sometimes cinnamon too.  Our eggnog frosting recipe includes some freshly grated nutmeg.  Grating the nutmeg fresh really increases the flavor and freshness.  Look for whole nutmegs in your spice section, and use a small mini grater to grate it into your baking.  Freshly grated nutmeg is a little stronger tasting than ground nutmeg, so don't be tempted to add more than the recipe calls for, since it can become too much of a good thing and over power the recipe. You can also use regular ground nutmeg if you don't have whole nutmegs to grate yourself.   Also, you can also add ½ teaspoon of ground cinnamon to the recipe if you're a big cinnamon lover.

Perfect Holiday Desserts

Since it’s the holidays and we’re all getting a little dressed up to celebrate, I baked these cupcakes in a shiny gold cupcake liner and added some glitz to the top.  I love the little stars in gold, and you know how I feel about the edible glitter!  These cupcakes are the perfect way to wish someone a merry Christmas.  They would also be great for ringing in the New Year.

This eggnog frosting recipe is the perfect topping to these cupcakes, it would be amazing on gingerbread cupcakes too.  It would also be delicious on sugar cookies, gingerbread cookies, in sandwich cookies, or any holiday cookies.  Any eggnog lovers would adore this on top of spice cake, or gingerbread cake.  The combination of the warm spice from these cakes with the creamy eggnog frosting  is sure to win over even the non-eggnog drinkers.  You could also keep things simple and use a simple cake mix for spice cake or vanilla cake to make a quick and easy holiday dessert that's sure to impress.

Eggnog Frosting

Ingredients

  • ½ cup butter room temperature
  • 4 cups powdered sugar
  • ½ cup eggnog
  • 1 teaspoon vanilla extract
  • ½ teaspoon grated nutmeg

Instructions

  • In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl with an electric mixer, beat your butter at a medium speed, and then slowly incorporate your powdered sugar, eggnog, vanilla, and freshly grated nutmeg. Be sure to scrape down the sides of the bowl part way through.
  • Whip until smooth and fluffy.
  • Pipe onto your vanilla cupcakes, cookies, or cakes and enjoy. Store any unused eggnog frosting in an airtight container in the refrigerator.
