This chocolate pudding cake is so good. You’re going to love it. It’s the perfect combination of cake and pudding-ie goodness, and so good served hot with vanilla ice cream. It’s a dinner party favourite around here, because guests always love it, and you can do most of it ahead, and then put it in the oven while your eating dinner and serve it to your guests still warm. It’s a great recipe for holiday entertaining too. Here’s how you make it.
Chocolate Pudding Cake (Chatelaine Magazine, Feb. 1999)
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup white sugar
- 2 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup milk
- 1 tsp vanilla
- 3 tbsp unsweetened cocoa
- 3 tbsp melted butter
- 3 squares (3 oz.) bittersweet chocolate, coarsely chopped
- 1/3 cup white sugar
- 1/4 cup brown sugar
- 2 tbsp unsweetened cocoa
- 1 cup cold water
Method:
1. Preheat oven to 350F. Lightly butter an 8-cup casserole dish.
2. Combine the flour, 1/2 cup white sugar, baking powder and salt in a mixer.
3. Add the milk and vanilla, and stir until thick and smooth.
4. In a small bowl, mix the butter with 3 tbsp of unsweetened cocoa until blended. Stir the cocoa mixture and chopped chocolate into the four mixture, until just combined.
5. Turn mixture into the buttered casserole dish.
6. In a small bowl combine 1/3 cup white sugar, brown sugar and 2 tbsp of unsweetened cocoa.
{If your making this for a dinner party, stop here and wait unti just before serving dinner to complete these next steps. Put it in the oven to bake while you eat dinner, and it will be ready in time for dessert. }
7. Sprinkle the mixture evenly over the top of the pudding mixture. Do not combine it.
8. Carefully pour the water over the top of the sprinkled dry mixture, being careful not to combine it either. DO NOT STIR.
9. Bake in the centre of 350F oven for 25 to 30 minutes until the cake is slightly glazed on top and the sauce is bubbling around the edges.
10. Serve hot with vanilla ice cream.
With warm chocolate pudding cake and a scoop of vanilla ice cream, life really is a party. Enjoy!
