Keto Ice Cappuccino Recipe -you don’t have to miss out on your favourite summer coffee treat, this keto friendly recipe is easy and delicious.
This Keto Ice Cap is the perfect fix if you’re doing keto this summer and miss Tim Hortons. (Don’t worry if you’re not keto you can use regular sugar in place of the monk fruit sugar and make a great regular ice cap too.)

I was surprised how easy this little treat was to make. I’m calling it a treat, but it is very keto friendly and only has a few carbs in it (depending on what brand of heavy whipping cream you use). And if you are keto, you probably all ready have all the ingredients on hand. Some people add collagen and MCT oil powder -which you can do to make a frozen bulllet proof coffee. I liked it as is.
For this recipe I used Monk Fruit Erythritol as the sweetener. I usually buy it in bulk at the bulk barn in Canada. It can be used at a one to one ratio as a replacement for regular sugar. I usually find this particular one is a little less sweet than regular sugar. I’ve read that monk fruit erythritol is usually slightly sweeter than regular sugar. Use my measurement as a guide, but adjust depending on whatever sweetener you prefer to use, and according to your own taste.
I Love Ice Caps
I love a good ice cap. Many, many years ago -I think when ice caps were relatively new I was a new teacher. I had a very small class of 9 students in a private school. Our last (and one of our favourite) units for English was poetry writing. Our culminating activity for the unit was our own poetry cafe. My students were very excited to spend the whole period sharing their work with one another and creating our own cafe environment.
When we talked about a cafe they excitedly told me we should get ice caps because it was so hot out, they were so good, and it would be perfect for our cafe vibe. I had never had one before. On the day of the cafe I slipped out at recess and bought us all ice caps. You would have thought I had given them the moon. They couldn’t believe it, and were so happy that I’d surprised them with this treat. It set the tone for an amazing poetry cafe, and is still one of my very favourite memories of teaching.
I think every time I’ve had an ice cap since then, I’ve thought fondly of them, my first class. I definitely missed this old favourite summer treat so I’m pretty excited to have an easy to make and delicious keto version to enjoy this summer.
- 2 cups brewed coffee
- 4 cups ice cubes
- 1/3 cup heavy whipping cream
- 4 tbsp monk fruit erythritol (or favourite sweetener)
- 1/2 tsp vanilla
- Brew 2 cups of regular coffee.
- In a blender, combine ice, cream, monk fruit erythritol, vanilla and coffee.
- Blend until smooth and completely combined.
- Pour into 2 glasses and enjoy.
This is the perfect pick me up in the afternoon -and remember you can make a non-keto regular version by using regular sugar in place of sweetener if you’d like to.
