Why We Love This Recipe

  • It's super simple -no paninis press required.
  • The sandwiches are toasty, crispie and flattened -just like your favorite at home paninis.
  • These sandwiches are easy to make.
  • Everyone can make their own and custimize it with their own favorite toppings. (Make it regular, dairyfree, gluten free, or vegan)

Camping is such a fun activity, and making special food over the campfire is a highlight. Check out our campfire cinnimon rolls, or our campfire muffins made in orange peels. And what could be better on a camping trip than a gourmet s'mores charcuterie board?

These campfire paninis are so easy to make and so delicious. Use my favorite combination of toppings, or something different. And use our rock hack to make crusty, crunchie, perfectly toasted pannis around the campfire.

Ingredients

My very favourite panini combo is hot salami, roasted red pepper, pesto, and bocconcini mozzarella.

You can use any combination of meat, cheese, and condiments that you love.

  • Bread -Choose a nice loaf, we used French bread, and cut your bread quite thickly.
  • Hot Salami -I like to add alittle heat with hot salami, but regular is great too if you prefer something more mild.
  • Roasted Red Peppers -I use the jarred kind, they're quick and easy. You could use fresh red peppers and roast them over the campfire, then remove the peel and core.
  • Pesto -jared pesto makes this sandwich easy, but fresh woud taste even better.
  • Bocconcini Mozzarella -a mild boccocini is delicious and creamy, and has a great pull factor when melted, but any favorite cheese is great.

Alternatives

For a really kid friendly version, try a classic grilled cheese cooked this way.

Equipment -DIY Campfire Panini Press

Start out with a grill on the fire, and cover it with a little foil, or use a pan, like an iron skillet. To make our camping version of a panini press you also need to find a good rock, with a flat side.

Cover the rock in foil.

This is your campfire panini press.

  • aluminum foil covered grill over the campfire
  • aluminum foil covered flat rock

Method

  1. Step 1: Cut the bocconcini ball into slices, and layer the meat, cheese, and roasted red pepper, on thickly sliced French bread Add some pesto sauce. Once the sandwich is made, brush the two outer sides with olive oil, just like a regular panini.

2. Step 2: To make your campfire panini press, wrap a large rock that is flat on one side with aluminum foil. Cover your campfire grill with aluminum foil.

3. Step 3: Place your sandwich on the grill and put the rock on top to flatten it. Cook until the bottom is toasted and then flip over to the other side and cook until it's toasted and the cheese is melted. Then enjoy!

Frequently Asked Questions

Do I have to use a campfire to cook these?

No, you could also use a camp stove instead with a frying pan, and your rock on top.

Can you make these veggie?

Yes, change out the meat and cheese for a veggie option like vegan cheese.

What would a kid-friendly option be?

If your kids like grilled cheese, make a version with just their favorite cheese inside.
