This Banana Snack Cake is an easy one bowl recipe, perfect for using up over ripe bananas. The simple fluffy vanilla icing elevates it and makes it feel extra special, with some added sweetness too. This recipe is a classic that's quick to make and that you will come back to again and again for its moist texture and buttery flavor.

This easy banana cake recipe is one of my favourite go-to banana recipes. It always makes a delicious moist cake, and is the perfect way to use up your over ripe bananas.

My mother-law uses this recipe to make an easy banana bread…because that’s what good, using up the leftover spotty bananas, responsible people do. 

But people who want life to be a party, they want to turn banana bread into CAKE! They want cake, covered in icing.  And they shall have it.

  • Over ripe bananas: This is one of my favourite easy recipes for using up very ripe bananas.
  • Banana Cake Recipe Without Buttermilk: If you're looking for an easy banana cake recipe to make that does not include buttermilk, than this recipe is perfect. There's no need to worry about having buttermilk, or even a buttermilk substitute. In fact you probably have all the ingredients to make it in your pantry, as long as you have some overripe bananas.

Expert Tip: If you find that you have extra over ripe bananas you can freeze them and use them later to make this cake. Just peel them and put them in a ziplock bag and store them in the freezer. The next time you want to make banana cake, just thaw and use this recipe.

Variations

  • Cake, Bread or Muffins: You could easily make this recipe into a loaf for an easy banana bread recipe. You could also make this recipe into banana muffins, just adjust the cooking time down so that they don't over bake.
  • Chocolate Chips, Nuts, or Raisins: This recipe is a favorite of my readers on Pinterest and lots of people have made it and added chocolate chips, nuts, and raisins. Feel free to experiment and see what you like.
  • Cream Cheese Frosting: If you prefer a cream cheese frosting, you can substitute it for the vanilla frosting.

How To Make Banana Snack Cake

  1. Step 1: In the bowl of a stand mixer fitted with the paddle attachment, start by combining the wet ingredients. Mix the bananas, sugar, egg and melted butter until well combined. Or use an electric mixer and a medium bowl to combine.

  1. Step 2: Add the flour, salt and baking soda, to the banana mixture and stir until the dry ingredients are well combined at a medium speed, but be careful not to over-mix.

  1. Step 3: Pour the batter into an 8 x 8 baking dish that's been sprayed with non-stick cooking spray. Bake at 350, for around 40 min, until a toothpick inserted in the middle comes out clean.

  1. Step 4: After the cake is cool, combine the icing ingredients in a mixer and mix slowly until well combined, and then at maximum speed until light and fluffy. Spread the icing over the top of the cooled cake, and enjoy. Store in an airtight container or cover in plastic wrap.

Frequently Asked Questions

Why did my banana snack cake sink in the middle?

Your cake was probably underbaked. Next time, let bake until a toothpick inserted in the center of the cake comes out dry, and the center of the cake has some give if pressed down on gently with your finger.

Can I make this banana snack cake in a loaf pan?

Yes, use this recipe to make banana bread. Bake in a loaf pan, and leave the icing off.

Why does my banana cake look so dark?

Sometimes, if your bananas are really sweet, the extra sugar will carmalize and cause the cake to be darker. Baking in a dark pan can also cause the cake to be darker, and of course over over-baking or burning can also cause the cake to be dark.

How do I store banana snack cake and keep it moist?

Store banana snack cake in an airtight container at room temperature for up to 3 days.

Ingredients

  • 3 large ripe bananas
  • 1 cup white sugar
  • 1 egg
  • ¼ cup melted butter
  • 1 ½ cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda

You can use frozen bananas in the recipe.  Freeze peeled ripe bananas in a ziplock bag, and thaw before using in this cake.

    Hi Sarah, I don't see why you couldn't double it for a larger cake. You might need to increase the cooking time a little too. Let us know how it goes if you do.

    I have using this recipe for years,
    I regularly buy bananas just to make double batches, it can easily be adapted with different ingredient, chocolate chips, cinnamon are favourites
    It stays moist for days

    This recipe is so delicious everyone loved it instead of all purpose flour I used whole wheat organic flour and instead of white sugar I used coconut sugar it came out so tasty and easy thank you
