Chocolate chip oatmeal muffins are the perfect combination of home-y nutty oatmeal and delicious chocolate chips.  They have a chewy texture from the quick-cooking oats, and then a nice  bit of chocolate too.  This is a real favorite for a perfect breakfast.  It's the perfect way to start your day with your morning coffee.  These delicious homemade muffins is also make a perfect snack.

I got together with some girl friends this morning for a cup of coffee, and thought I would make these yummy oatmeal chocolate chip muffins.  They are really delicious and easy to make.  And they're filled with simple ingredients that you probably have in your pantry already.

Like any typical muffin recipe, or quick breads these muffins rely on baking soda for their rise.  For best results make sure to use fresh baking soda that is within date.  This moist muffin is quite dense and hearty because of the oatmeal.  The oatmeal adds such a wonderful nutty flavor, and chewy texture.

This recipe starts out by soaking the oatmeal in milk.  This adds a dense richness to the muffins and makes them very moist.  Other than that, this recipe is very quick to mix together.  There's no need for your stand mixer you can quickly mix these together by hand.  There' a perfect quick recipe to mix together in the morning for fresh baked muffins for breakfast.  It's also a great easy recipe to make with kids.

Chocolate

These muffins are filled with chocolate chips.  We like to use regular semi sweet chocolate chips.  They are nice and sweet and chocolatey.  If you are making mini muffins, you might substitute mini chocolate chips instead of regular.  You can also change out the chocolate chips to use milk chocolate chips, or dark chocolate chips if you prefer.

Store any leftover muffins in an airtight container at room temperature.

This oatmeal chocolate chip muffin recipe is a small batch.  It only makes 12 muffins.  You can double it if you need more a second batch of these.  If you're making these for little ones, you can also make them into mini muffins, perfect for school lunches.  Just be sure to adjust the baking time to less for the mini muffins.

These hearty muffins are delicious for a quick and easy breakfast or a snack anytime of day. The kids loved them since they include chocolate chips, and I liked that they had oatmeal in them too. The oatmeal adds a lovely nutty flavor and great texture to these moist muffins.  This is sure to become one of your favorite muffin recipes.  Next time you want a great muffin with a little bit of chocolate, give this recipe a try.

Ingredients

  • 1 ¼ cup quick oats
  • 1 ¼ cup milk
  • 1 egg
  • ⅓ cup vegetable oil
  • ½ cup brown sugar
  • ¾ cup semi-sweet chocolate chips
  • 1 teaspoon vanilla extract
  • 1 ¼ cup all purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt

Instructions

  • In a large bowl combine oats and milk and let stand for 15 minutes.
  • Stir egg, oil, brown sugar, vanilla and chocolate chips into oat mixture.
  • In a separate bowl combine the dry ingredients of flour, baking powder, baking soda, and salt and add it to the wet ingredients. Stir until moistened and combined.
  • Use paper liners or cooking spray in a 12-cup muffin pan. Fill muffin cups ⅔ full with muffin batter. Bake in a 4oo degree oven for 15-20 minutes or until lightly browned. Remove the muffins from the muffin tin when they're finished and cool muffins on a wire rack.

    I want to try these but I only have quick oats. I'm afraid if I soak them in milk they will get soggy. Should I skip that step? Any suggestions?
