Oatmeal Chocolate Chip Muffins
Oatmeal Chocolate Chip Muffins: these easy muffins with oatmeal and chocoalte chips are the perfect combination for breakfast or a snack.

I got together with some girl friends this morning for tea, and thought I would make these yummy oatmeal chocolate chip muffins. They are really delicious and easy to make and have become a family favourite.

Ingredients
- 1 1/4 cup oats
- 1 1/4 cup milk
- 1 egg
- 1/3 cup oil
- 1/2 cup brown sugar
- 3/4 cup chocolate chips
- 1 tsp vanilla
- 1 1/4 cup flour
- 4 tsp baking powder
- 1 tsp salt
Instructions
- Combine oats and milk and let stand for 15 minutes.
- Stir egg, oil, brown sugar, vanilla and chocolate chips into oat mixture.
- Combine three dry ingredients and add to the liquid mixture. Stir until moistened.
- Use paper liners or cooking spray in a 12-cup muffin pan. Fill muffin cups 2/3 full. Bake in a 4oo degree oven for 15-20 minutes or until lightly browned.

These are delicious for breakfast or a snack. The kids loved them since they include chocolate chips, and I liked that they had oatmeal in them too. They’d be great as part of a Mother’s Day brunch this weekend. Enjoy!

I want to try these but I only have quick oats. I’m afraid if I soak them in milk they will get soggy. Should I skip that step? Any suggestions?
