This is also a great make head for meal prep.  If you’re looking for a great dish for busy weeknights this is an easy weeknight dinner.  My favorite part of making this is the great leftovers.  Make lunch the easy way, and use the leftovers for an easy lunch the next day.   I love easy meals like this one, where you can prepare different components and then change up each one you put together.

Beef Burrito Bowls

Ingredients

Steak Seasoning

  • 1 tsp chilli powder
  • 1 tsp salt
  • ½ tsp ground black pepper
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ½ tsp cumin
  • ¼ tsp dry oregano

Steak

  • 4 steaks, about 1 ½ lbs total
  • 2 tbsp oil
  • 1 small onion, sliced

Pico de Gallo

  • 2 tomatoes cubed
  • ½ large onion diced
  • ¼ cup lime juice
  • ¼ cup chopped cilantro
  • ¼ tsp salt

Burrito Bowls

  • 8 servings cooked white rice or brown rice
  • 2 cups shredded lettuce
  • 2 cups black beans or kidney beans
  • 2 cups corn
  • 1/4 cup hot pickled peppers
  • 1/4 cup black sliced olive
  • 1/4 cup sliced spring onions
  • 1/4 cup fresh cilantro
  • 2 sliced avocado
  • 2 cups salsa
  • 2 cups sour cream
  • hot sauce (optional)
  • 8 lime wedges
  • 4 cups tortilla chips

Instructions

    1. To make the steak seasoning, combine all the ingredients together in a small bowl.
    2. For the steak, slice the steak into ¼ inch strips. Heat 2 tbsp of oil in a large skillet. Combine steak strips, steak seasoning, and onion and cook for about 5 minutes over medium-high heat, or until rare to well done, depending on your personal preference.
    3. Next, to make the pico de gallo, combine all the ingredients together in a small bowl.
    4. Now to assemble a burrito bowl combine warm cooked rice, cooked beef mixture and shredded lettuce along with any of the other ingredients and enjoy.
