Where are my pancake people at?  I have to admit that I used to be more of a savory breakfast person.  Bacon and eggs were my very favorite weekend morning breakfast.  This might have had something to do with the fact that I was raised by savory breakfast people.  Fast forward to being married with two children and somehow finding myself in a whole household of sweet breakfast people.  

Pancakes were on the menu every weekend when my girls were little, and I have to say I kind of love to start the day with them now too -I'm a sweet breakfast convert.

They loved these Jelly Donut Pancakes too. And for parents only, this Bailey's French Toast is the perfect brunch treat. You might also like our Pumpkin Bread with Walnuts, or Sweet Cake Like Cornbread.

Ingredients

  • Buttermilk or Regular Milk: You can make this small batch pancake recipe with buttermilk or with regular milk.  The buttermilk tends to make slightly tangy and more fluffy pancakes, and they are really delicious.  Why are buttermilk pancakes more fluffy?  The buttermilk has some acidity to it and reacts with the baking soda to create more bubbles, more height to the pancakes, and fluffier overall texture.  Use buttermilk in this recipe instead of regular milk to make fluffy buttermilk pancakes.

Variations

If you like to jazz things up a little, you can add some other items to your pancakes.  

  • Chocolate Chips: Add some chocolate chips to the batter for delicious chocolate chip pancakes.  
  • Blueberries: If you love fresh blueberries, add them to the batter for blueberry pancakes.  
  • Bananas: Make banana pancakes by added sliced bananas into the pancake batter.
  • Toppings: You can also try different toppings on your pancakes too.  These are delicious served with fresh fruit like berries and whipped cream. Also try them with peanut butter, Nutella or jam as another fun option for pancake day.

Pancake Size

We made our pancakes medium sized, but you can make them bigger or smaller if you like.

  • ½ cup of batter = 4 pancakes.  
  • ⅓ cup of batter = 6 pancakes
  • ¼ cup of batter = 8 small pancakes
  • 1 cup  of batter = 2 big pancakes

Adjust your cooking time according to the size of the pancakes.  Smaller pancakes will cook more quickly, and larger pancakes will take longer to cook through.

How To Make Small Batch Pancakes

  1. Step 1: Combine flour, sugar, baking powder, baking soda, and salt in a large bowl, and use a whisk to stir the dry ingredients together.

  1. Step 2: In a separate bowl, add the milk, melted butter, egg, and vanilla and whisk to combine.

  1. Step 3: Pour the wet ingredients into the dry ingredients, and stir together. Don't over mix, some small lumps are fine.

  1. Step 4: Heat a large frying pan or electric griddle over medium heat. Spray with non-stick cooking spray. Use a ½ cup measure to make 4 pancakes. When small bubbles appear on the surface of the pancake, flip it over and cook the other side until golden brown.

Storing Pancakes

We're making a small batch so that there's no leftovers, but just in case you can store these in an airtight container in the refrigerator. Reheat them in the microwave or toaster the next day.

Expert Tips

  • Buttermilk makes extra fluffy pancakes, but you can make these with regular milk and they're still great.
  • You'll know your pancake is ready to flip over when little bubbles form all over the surface.
  • Don't over mix your batter. A few lumps are fine. Over mixed pancake batter develops too much gluten and creates tough pancakes.

Frequently Asked Questions

Why aren't my pancakes fluffy?

Your baking powder or baking soda may be expired. Check the date on both of them to make sure they're in date. Also, using buttermilk will make more fluffy pancakes as the acid in the buttermilk reacts with the baking soda making bubbles. If you love fluffy pancakes then be sure to make these with buttermilk not regular milk.

Why are my pancakes tough?

Your pancakes may be tough if you over work the batter. Mix well, but don't worry about a few lumps in your batter. Avoid the temptation to over-stir the pancake batter which can develop too much gluten and make tougher pancakes.

How can I double this small batch pancake recipe?

If you're making this recipe for a crowd, you can double it, or even triple it. Just double or triple the ingredients all in one batch.

Ingredients

  • ¾ cup all purpose flour

Notes

Make these pancakes with regular or buttermilk.  They're extra fluffy when made with buttermilk.
We used ½ cup of batter to make 4 pancakes.  If you want smaller pancakes you could use a ⅓ cup of batter for 6 pancakes, or ¼ cup of batter for 8 small pancakes.  Or make really big pancakes with 1 cup  of batter each to make 2 pancakes.  Adjust your cooking time according to the size of the pancakes.  Smaller pancakes will cook more quickly, and larger pancakes will take longer to cook through.  
When you see bubble forms on top, it's time to flip the pancake.
Serve hot with butter and maple syrup.
