The Quintessential Tea Party Sandwich
Every tea party spread needs a cucumber sandwich. Not because it is the most complex or the most impressive thing on the table, but because it is the one sandwich that everyone recognizes as afternoon tea. It signals to your guests that you made a proper fuss.
And they're delicious. They have the perfect combination of soft bread, tangy cream cheese and Miracle Whip and crunchy cucumbers. They are simple, but perfect. And they're the kind of thing that you eat and think why don't I make these more often?
Our version is genuinely simple. Cream cheese on one side of the bread, butter and Miracle Whip on the other, and thinly sliced English cucumber in between. No herbs. No whipped cream cheese. No soaking or salting the cucumbers. Just clean fresh flavors that let the cucumber shine.
The secret weapon is the Miracle Whip. We know some people raise an eyebrow at this but hear us out. The tangy zip of Miracle Whip works better in a cucumber sandwich than mayonnaise because the acidity cuts through the richness of the cream cheese and brightens the whole sandwich. It is the kind of thing you cannot identify but you definitely notice when it is missing. But -if you're not a fan, you can of course use mayonnaise instead.

Ingredients
- Soft white sandwich bread -classic white bread is the only choice for tea sandwiches. The delicacy of the bread is part of what makes a tea sandwich a tea sandwich.
- Cream cheese, softened -must be fully softened so it spreads smoothly without tearing the bread. Take it out of the fridge at least 30 minutes before you start.
- Butter, softened -same rule applies. Cold butter tears the bread and creates uneven coverage. Softened butter spreads in a thin even layer that acts as a barrier against sogginess, and adds buttery flavor.
- Miracle Whip -the tangy zip is what makes this sandwich. Trust us.
- English cucumber -leave the peel on. The green edge looks beautiful on the finished sandwich and English cucumber skin is tender enough that it does not need removing.
Variations
- Traditional British version -butter only, no cream cheese or Miracle Whip. Simple and classic if you want the purest version.
- Herbed cream cheese -mix fresh dill or chives into the cream cheese for a more flavourful version. Beautiful for a more elaborate spread.
- Pumpernickel -swap the white bread for thin sliced pumpernickel for a more dramatic visual. The dark bread against the pale cream cheese and green cucumber is stunning on a platter.
How To Make Tea Cucumber Sandwiches

- Step 1: Butter the bread. Spread a thin even layer of softened butter on half the bread slices. This is the soggy sandwich defense - the butter creates a barrier between the Miracle Whip and the bread.

- Step 2: Add the cream cheese. Spread a generous layer of softened cream cheese on the other half of the bread slices. Make sure it goes all the way to the edges so every bite has filling.

- Step 3: Add the Miracle Whip. Spread a layer of Miracle Whip directly over the butter on the buttered slices. The combination of butter underneath and Miracle Whip on top is what makes this sandwich.

- Step 4: Slice and layer the cucumbers. Slice the English cucumber to about 2 to 3mm thick. You want them thin enough to be delicate but thick enough that you actually taste the cucumber. Layer them over the cream cheese side.

- Step 5: Assemble and remove crusts. Place the Miracle Whip and butter slices on top of the cucumber and press gently. Remove the crusts with a sharp serrated knife using a sawing motion.

- Step 6: Cut into fingers. Cut each sandwich into 3 equal rectangular fingers. Wrap in plastic wrap and refrigerate until serving. To serve arrange cut side out on a platter or tiered tray so the layers of cream cheese and cucumber are visible.
How to Prevent Soggy Cucumber Sandwiches
Soggy cucumber sandwiches are the number one fear and the answer is simpler than most recipes make it sound.
The butter on the bread is your first line of defense. It creates a barrier that stops the moisture from the cucumber soaking into the bread.
The most important thing is timing. Make these the morning of your party, not the night before. Cucumber sandwiches are a quick morning prep job. They take 15 minutes and they are at their best when freshly made. Assemble them, wrap them tightly in plastic wrap, and refrigerate until serving.
How Many Sandwiches Per Person
Plan for 3 to 5 finger sandwiches per person total across all the varieties you are serving. This recipe makes 12 finger sandwiches.
Serving These at a Tea Party
- Arrange cut side out on the platter so the layers are visible.
- A tiered tray with cucumber sandwiches alongside other varieties on the bottom tier is the classic presentation.
- Garnish the platter with a few fresh herbs for a beautiful finishing touch.
- These pair beautifully with egg salad tea sandwiches, chicken salad finger sandwiches, and ham tea sandwiches for a complete tea party sandwich spread.
We served these at our Little Women vintage tea party and they were a hit.
Frequently Asked Questions
Cucumber sandwiches became a staple of British afternoon tea in the Victorian era when they were considered a delicacy - cucumbers were expensive to grow and serving them signalled wealth and hospitality. Today they are simply a classic that everyone recognizes as proper afternoon tea.
Not if you are using an English cucumber. The skin is tender and the green edge looks beautiful on the finished sandwich. If using a regular field cucumber the skin can be tougher and more bitter you might prefer to peel them.
No. With English cucumber and same day assembly salting is unnecessary. The key is assembling them on the day of serving.
We do not recommend it. Cucumber releases moisture over time which makes the bread soggy no matter what precautions you take. Make them the morning of your party for the best result.
Butter one side of the sandwich, and use cream cheese on the other side of the bread. These will act as a barrier between the bread and the cucumber, which is the source of the moisture. Also very important is to make them the morning of your party, not the day before. Cover tightly in plastic wrap and refrigerate until serving.
Tea sandwiches are made with soft white bread, crusts removed, and cut into delicate fingers or triangles. The filling is lighter and more refined than a regular sandwich. The overall effect is elegant and dainty.
