A few years ago we took a trip through Germany and found ourselves at a Christmas market nestled right in the Black Forest, tucked alongside a stream with a little cafe right there among the trees. When in Rome! We ordered the Black Forest cake and it was made completely from scratch. It was one of those bites you remember for a long time.

When we got home I wanted to recreate those flavors in a format that actually worked for a party. The result is this black forest trifle made in individual mason jars.

We use a boxed chocolate cake mix here without any apology at all. The cake is the foundation and the magic is really in those layers of chocolate, cherry, and cream together. What is absolutely worth the extra five minutes is making real whipped cream. Beat it all the way to stiff peaks and it holds up beautifully for hours without weeping or going flat. The flavor difference compared to a tub of whipped topping is genuinely noticeable.

The individual jar format is what makes this version so practical for entertaining. Each guest gets their own beautifully layered trifle. Nothing gets scooped and messed up as the night goes on. You close the lids, slide the whole batch into the fridge, and the dessert is completely done and ready whenever you are.

What Makes a Dessert "Black Forest"?

Black Forest desserts take their name from the Schwarzwald region in southwestern Germany, famous for its sour cherries and kirschwasser, a clear cherry brandy distilled from those cherries. A traditional Black Forest cake layers kirsch-soaked chocolate sponge with sour cherry filling and stabilized Chantilly cream.

Our version keeps all those classic flavors in an easy shortcut format using sweet cherry pie filling. If you are serving adults and want to add a little of that authentic note, drizzle a small amount of kirsch over the cake layers while assembling each jar. About a teaspoon per jar is all you need and it adds a lovely depth to the whole thing.

  • Chocolate Cake Mix: Any devil's food or dark chocolate cake mix works well here. Bake it in two round pans, let it cool completely, and then use your mason jar like a cookie cutter to punch out the perfect size circles for layering. You will have extra cake left from around the circles, which I consider a bonus for whoever is in the kitchen.
  • Cherry Pie Filling: One can of sweet cherry pie filling is the right call here. It layers cleanly and has just the right consistency to hold its place without making the cake soggy.
  • Whipping Cream: Use real whipping cream and beat it yourself. Add the vanilla and sugar once you reach soft peaks, then keep going all the way to firm stiff peaks. This is the step that makes the biggest difference in the finished result. Of course, you can use whipped topping instead if you prefer, or you're in a rush.
  • Chocolate Shavings: Run a vegetable peeler along the edge of a chocolate bar and you have beautiful curls in about one minute. It is a small touch that makes each jar look really special.

How to Make Black Forest Trifle in a Mason Jar

  1. Step 1: Bake the chocolate cake according to the package directions in two round cake pans. Let the cakes cool completely on a wire rack before assembling. The layers hold much better if the cake is fully cool. Press your half-pint mason jar down into the cooled cake to cut out a circle for each jar. Slice each circle horizontally in half so you have two thin layers per serving. This gives you the classic layered look inside the glass.

  1. Step 2: Add the whipping cream to a stand mixer fitted with the whisk attachment and begin whipping. Once you reach soft peaks, add the vanilla extract and sugar and continue whipping to firm stiff peaks. The cream should hold its shape when you lift the whisk. Transfer to a piping bag or a zip-lock bag with one corner snipped off for the neatest layers.

  1. Step 3: Assemble each trifle starting with a bottom layer of cake. Add a layer of cherry pie filling, then pipe on a layer of whipped cream. Repeat with a second layer of cake, cherry pie filling, and whipped cream. Take care to keep the inside walls of the jar clean as you go for the best visual effect.

  1. Step 4: Top each trifle with a sprinkle of chocolate shavings. Seal the lids on the jars and refrigerate for at least one hour before serving to let the flavors come together and the layers settle beautifully.

Expert Tip

The whipped cream is the one step worth slowing down for. Go all the way to firm stiff peaks instead of stopping at soft peaks. The cream will pipe cleanly into layers, hold its shape through chilling, and still look beautiful several hours later. It takes about two extra minutes and makes a real difference to how these look and taste at serving time.

Why Individual Trifles Are Such a Good Party Dessert

This is genuinely one of my favorite formats for a crowd dessert and here is why. When you serve a large trifle bowl, the layers start looking messy the moment the first spoonful is taken. With individual jars, every single guest gets a beautiful dessert and the table keeps looking great from first serving to last. The lids mean you can assemble everything the morning of your party, put the lids on the jars and pop them in the fridge, and not think about dessert again until you are ready to serve. They also travel beautifully to a potluck or picnic without anything shifting or spilling.

For a pretty presentation, arrange the jars in a row on your dessert table and set out a jar of extra spoons beside them. Guests love helping themselves.

Perfer one large trifle? You can assemble one large Black Forest trifle instead in a traditional glass trifle bowl if you like that better.

Make Ahead and Storage

These trifles are genuinely better when made ahead because the cake layers have time to soften slightly and absorb some of the cherry juices. Assemble the jars, sprinkle on the chocolate shavings, and add the lids. They keep beautifully in the refrigerator for up to 24 hours.

For a party, the morning of the event is the sweet spot for assembly. If you need to work further ahead, you can bake the cake up to two days in advance, then assemble the jars the day of.

Freezing is not recommended. The layers become very soggy when thawed and the whipped cream does not freeze well.

Can I add alcohol to this recipe?

Absolutely. Traditional Black Forest desserts use kirschwasser, a cherry brandy from the Black Forest region. Drizzle about one teaspoon over each cake layer when assembling for a subtle adult twist that is really lovely.

Can I use Cool Whip instead of real whipped cream?

You can. It is a convenient shortcut and will still taste good. Real whipped cream makes a noticeable difference in flavor and texture, but Cool Whip is a perfectly reasonable option when time is short.

What can I use instead of cherry pie filling?

Fresh or frozen dark cherries cooked down briefly with a little sugar make a wonderful homemade filling.
