These pumpkin spice rice krispie treats are the ultimate fall dessert. They're easy to make in 30 minutes, full of cozy pumpkin flavor, and perfect for Halloween, Thanksgiving, or any fall party. And we're using real pumpkin and spices, so there's no artificial taste.

It's October and officially pumpkin spice month!  This calls for everything pumpkin spice, including your favourite rice krispies!  

We're rice krispie treat fans around here -like they're my husbands absolute favorites. So I thought it would be fun to make some pumpkin spice rice krispie treats to celebrate the season. Some people call these pumpkin marshmallow bars or pumpkin krispies, but whatever you call them, they're the best fall twist on classic rice krispie treats.

After a few attempts, I perfected the easy recipe, and I've been making them every fall ever since. I've worked out how to get the best pumpkin, and pumpkin spice flavor without getting soggy rice krispie treats and I can't wait to share my secrets with you!

There's only a few tablespoons of pumpkin puree in this recipe, so it's great for using up leftover pumpkin.

These are perfect for enjoying this fall with a cup of coffee, or a pumpkin spice latte. ;). They'd also be great to bring to a Pink Halloween Party, or any Fall Themed Party. how to make Pumpkin Spice Rice Krispies

Ingredients

  • Pumpkin: This recipe uses real pumpkin puree. Be sure to buy pumpkin puree and not pumpkin pie filling. Pumpkin pie filling has spices and other ingredients added to it. There's just a few tablespoons of pumpkin in this recipe, but it adds such great pumpkin flavor. The pumpkin in this recipe could make the rice krispies a little soaky, so we've drained the pumpkin puree on paper towel.
  • Pumpkin Pie Spice: You can use pumpkin pie spice in this recipe, look for it in the spice aisle of the grocery store, or make your own with ½ teaspoon cinnamon, ¼ teaspoon nutmeg, ¼ teaspoon ginger, and good pinch of ground cloves.

Variations:

  • Chocolate Chips: As an option you can drizzle your finished pumpkin spice rice krispie treats with melted white chocolate and pumpkin sprinkles, or instead you can add chocoalte chips right into your rice krispe mixture. When you add the rice cearal also add in 1 cup of white chocoalte chips, or semi sweet chocoalte chips.
  • Vegan/Diary Free: Replace the butter with vegan butter, and the marshmallows with vegan marshmallows for a vegan version of these pumpkin spice rice krispie treats.
  • Pumpkin Spice Latte Version: Love a pumpkin spice latte? Make these into a latte version by adding 2 tablespoon of instant coffee granules to the melted marshmallow mixture. Be sure it's instant coffee and not coffee grouds.

Expert Tip: Keeping Your Pumpkin Spice Rice Krispie Treats Crispy

Adding any liquid or even our pureed pumpkin to your rice krispie treat recipe can result in slightly soggy rice krispie treats.  We love the taste of real pumpkin in this recipe, but to combat this potential problem, our recipe calls for you to drain your pumpkin puree by plating it on a paper towel to absorb any excess moisture before adding it to your rice Krispie mixture. We also suggest you wait and let the marshmallow mixture sit for about 15 minutes before adding in the rice krispie cereal.  This ensures that the rice krispie cereal stays nice and crispy, and eliminates the soggy cereal problem.

How To Make Pumpkin Spice Rice Krispie Treats

  1. Step 1: Place the pumpkin puree on a paper towel lined plate and spread it out slightly. Leave it to drain.
  1. Step 2:In a large saucepan combine the butter, and marshmallows. Heat over a medium heat while stirring, until the butter and marshmallows are completely melted and well combined.
  1. Step 3: Remove from the heat and add in the vanilla, and pumpkin spice and stir to combine.
  1. Step 4: Let the hot mixture stand for about 15 min. Allowing it to cool before adding the rice cereal will help them from becoming too soggy. After 15 min. stir in the rice krispies until completely combined.
  1. Step 5: Spray a 9 x 13 inch pan with nonstick cooking spray and then pour the cereal mixture into it. Use a rubber spatula sprayed in nonstick cooking spray to smooth out the mixture.
  1. Step 6: Optional: top the rice krispie treats with a drizzle or melted white chocolate and pumpkin sprinkles, or use your hands to form the mixture into pumpkin shaped balls, and top with a prezel or chocolate stem.

Storage

Store your pumpkin spice rice krispie treats in an airtight container at room temperature.

We served our Pumpkin Spice Rice Krispies for our Thanksgiving Dessert table.  They were the perfect pumpkin-y and easy addition to Thanksgiving dinner or any fall celebration.

Why are my pumpkin spice rice krispie treats soggy?

Adding any moisture to rice krispie treats can result in them tasting soggy. The solution is to drain your pumpkin on a paper towel before adding to remove excess moisture, and let your marshmallow mixture sit for 15 minutes before adding in the rice cereal.

Can I make pumpkin spice rice krispie treats without adding pumpkin?

Yes, you can add the pumpkin spice and skip the pumpkin puree. They won't have the pumpkin flavor that adding pumpkin puree adds, but they will taste like pumpkin spice.

How can I make these pumpkin spice rice krispie treats thicker?

To make thicker pumpkin spice rice krispie treats, use an 8 x 8 baking dish instead of a 9 x 13 pan. They'll be twice as thick.

Ingredients

  • 3 tablespoon butter
  • 16 oz. bag of regular or mini marshmallows
  • 2 tablespoon pure pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 6 cups rice krispies
  • optional: melted white chocolate chips or wafers for drizzling and pumpkin sprinkles or pretzel or chocolate candies for stems

Instructions

  • Place pumpkin puree on a paper towel lined plate and set aside.
  • In a large saucepan, combine the butter, and marshmallows. Heat over a medium heat while stirring, until the butter and marshmallows are completely melted and well combined.
  • Remove from the heat and add in the drained pumpkin puree, vanilla, and pumpkin spice and stir to combine.
  • Let the hot mixture stand for about 15 min. Allowing it to cool before adding the rice cereal will help them from becoming too soggy. After 15 min. stir in the rice krispies until completely combined.
  • Spray a 9 x 13 inch pan with nonstick cooking spray and then pour the cereal mixture into it. Use a rubber spatula sprayed in nonstick cooking spray to smooth out the mixture. Allow to set and then cut the crispy rice treats into squares or triangles with a sharp knife.
  • Optional: Add a white chocolate drizzle and pumpkin sprinkles or instead of placing the mixture into the baking dish, use your hands to form small balls that look like pumpkins and top with a pretzel or chocolate stem.

Drain the pumpkin puree on a paper towel to remove any moisture and help stop your rice krispie treats from being soggy.  Also, let your marshmallow mixture stand 15 min. before adding the rice cereal, to also help them from becoming soggy by absorbing too much moisture.
Form in a baking dish, and decorate with melted white chocolate and pumpkin sprinkles, or form them into mini pumpkin shapes and add a pretzel or candy stem.
Be sure to store in an airtight container at room temperature.
