Today is muffin tin Monday again, and Maddie now looks forward to it, and loves it. The theme today at Muffin Tin Mom is Favourite Foods. We filled our tin with Maddie’s absolute favourites! They were: Bagel Bits mini pizza, broccoli, blue berries, and an ice-cream sundae of frozen yogurt (shhhh), chocolate sauce, Valentine sprinkles, and a cherry on top! We used some new Valentine cupcake liners and pics today too, and they were also a big hit.

We used a small plastic cup for the ice cream and stored it in the fridge so it wouldn’t melt while she ate everything else. ;)

Valentine’s day is getting closer, and with two pink loving little girls in the house, it’s time to start celebrating. Today is a wonderful, lazy, don’t need to be anywhere Saturday at our house. We have done crafts, watched Valentine’s Day cartoons, and played all day. I had an idea for a really sweet snack. I was inspired by Kim at Party Frosting, who was inspired by Andy at Poppies At Play, to try and make heart shaped cinnamon buns. Andy made great looking heart shaped cinnamon buns from scratch. They look amazing, and like a lot of work! Kim suggested trying it with store bought buns. So, I tried it.

I started out with Pillsbury ready to bake Cinnamon Rolls with icing.

I tried to half un-roll them.

Then I re-rolled them, and pinched the bottom to form a heart shape.

Then I baked them in rows on a small baking tray, according to the package instructions.

With a little icing and heart shaped sprinkles, I think they turned out pretty well, and the kids loved our “love buns”.

I thought it would be fun to have them with some pink hot chocolate. I saw a very expensive can of it at HomeSense this week, and I thought I could do my own version. I had some white hot chocolate, that I bought very inexpensively from the bulk barn.

I added a couple of drops of red food colouring, and voila, PINK HOT CHOCOLATE! And it seemed like the right occasion to pull out my little heart shaped tea cups.

One final little sweet detail…heart shaped marshmallows. I cut a regular marshmallow in half, and then used a mini cookie cutter to cut out the shape.

Today’s theme over at Muffin Tin Mom is “Big and Little”. I had a lot of fun brain storming with my girls about what our big and little foods should be. Here’s what we came up with:

Big and little chocolate chip cookies, big grapes, and little raisins, and big pasta shells and little pasta shells with butter and parmesan cheese. We used our snowman cupcake liners and pics since it’s another snowy day here.

Maddie loved her lunch, and even tried something new! She ate all her grapes, even though she told me she didn’t like them; she really wanted her cookies, and we have a “healthy things first” rule around here. Again the pics with snowman and snowflakes on them were a huge hit. Maddie was also quite excited about lining up all the big at the top and the little at the bottom. And, after explaining that raisins are dried up grapes, she even suggested we could turn our grapes into raisins, but that might have been just so she didn’t have to eat them ;)

Apple Pie

I love to cook and bake, but I’m not a pie maker, at least I haven’t been. My mom’s been making pie since she was 12 years old, and never used a frozen crust in her life! When my daughter Paige recently asked if I could teach her how to make apple pie, I directed her to Nanny. Perhaps the flaky crust gene skips a generation.

Nanny rose to the occasion, getting the girls the sweetest little pie plates, and rolling pins,and directing them to come to her house with their aprons. They’ve been counting down the days, and today it was finally apple pie making day!

They started with the crust. Nanny swears by the Crisco recipe that comes on the box. She does it old school. She owns an old fashion sifter. My girls didn’t even know what it was.

Crisco® No Fail Pastry

Ingredients
for two 9″ (23 cm) pie shells or 1 double-crust pie

2 cups Pastry Flour

3/4 tsp salt

1 cup CRISCO® All-Vegetable Shortening (1 Stick)

1 egg

2 tbsp water, cold

1 tbsp white vinegar

Preparation

Combine flour and salt in mixing bowl.

Cut room temperature CRISCO® Shortening into flour with pastry blender or 2 knives until mixture resembles coarse crumbs.

Beat egg, water and vinegar together to blend.

Pour all the liquid over flour mixture. Stir with fork until mixture is moistened use your hands, the way your Grandmother did.

Divide dough in half and shape into a ball. Flatten each into a circle about 4″ (10 cm). Wrap and chill dough 15 minutes for easier rolling.

Roll each portion of dough separately. Dust rolling pin and work surface lightly with flour.

Roll dough to a uniform thickness in spoke fashion from centre to edge with light even strokes. If dough sticks, dust lightly with flour. Roll to a circle about 1″ (2.5 cm) larger than upside down pie plate.

For easy transfer to a pie plate, slide spatula under dough to loosen it, then lift one edge of pastry onto rolling pin and loosely wrap it around the rolling pin. Unwrap pastry into pie plate. Ease into pie plate without stretching.

My mom likes to use McIntosh apples for pies.

First you peal them.

Then, cut them into slices.

Add some flour to thicken the juices, and some sugar, and cinnamon for sweetness and spice. Mix well.

Use this mixture to fill your pie shell.

Repeat rolling with remaining pastry for top.

And don’t forget, to roll it, pat it, and mark it with a…M for Maddie or P for Paige! (This will help the hot air escape.)

The pie was delicious, with a tender, flaky crust, and sweet apple filling! It took me back to my years as a little girl when homemade apple pie was a pretty everyday occurrence. Now, perhaps my kids can make me some on a regular basis again!

Today was Muffin Tin Monday, and this time we were really excited about it, and looking forward to it. We are starting to get into the Valentine’s Day swing around here, so since there was no theme today at Muffin Tin Mom, where the weekly muffin tin party is held, we had a Valentine’s Day Tin today.

Thanks to a tip from another mom, we turned our Valentine’s Day cupcake liners inside out so we could enjoy the pictures. Clever. We started out with English Muffin Pizzas. Strangely I had never made them for my kids before. Maddie thought they were great, and I was excited to have found low-fat turkey pepperoni at the grocery store today. I made two halves, and cut each into thirds. It was a little too much, next time just one half will do. We added a little broccoli, and some pears. She actually eat the pear first, and I owe it all to the red pom-pom pick. I saw from some of the other mom’s tins last week, that picks of all sorts are really popular with the kids. I’d never tried it before. I had these picks in my cupboard for ages and ages. I bought them for a Christmas party and forgot to use them, there is red and green. Today was the day to dig them out, and use the red to go with our Valentine’s Day theme, boy was it a hit! Another idea from the other moms was to add a few sprinkles to yogurt or pudding. She loved it! Chocolate pudding is already a treat, but add heart shaped sprinkles and it’s a party!
